Weigh Day (week sixteen)

Hello, weigh day!  I was not even the slightest bit anxious today to hop on the scale…probably because I have been weighing just about every day this week (since last week’s weigh in had me all in a “tizzy”).

So, my final weigh in number this morning?  Let’s all say this together…”Hello 260’s!!!”  That’s right!  My “official” weigh in for the week is 269.8, which is just *crazy* if you ask me.  That is four pounds down from last week’s weigh in, which brings my total to 42.2 pounds in sixteen weeks.  An average of 2.64 pounds each week.  Not too shabby…if I do say so myself.  I am getting more excited to reach the 50-lb lost mark, though.

If I am being completely honest, though, this all seems a little surreal to me still.  I mean, just a few short months ago I was more than 40 pounds heavier.  I was feeling horrible most days, my back was hurting, my ankle was hurting, I was having headaches *all* the time…I was miserable (in every way).  How amazing is it that I have lost about 14% of my body weight in *only* 16 weeks?  How amazing is it that I *feel* so much better and have *tons* more energy?  It is amazing to me.

Then – I get to thinking about why I *allowed* myself to be fat for so long.  Why did I not change my life before now?  Why did I allow myself to believe I was just *destined* to be fat forever?  That is what really kills me.  I just do not understand my life before this moment.  Interesting, isn’t it?  I am sure I am not the only one…all of you reading this on your own personal journey to health and wellness probably have that same feeling.  Confusion.  Trying to figure out why in the world you would have ever allowed yourself to miserable, fat, unhealthy, etc.

Oh well…I just take a deep breath…think about how *great* I feel now, and move on.  Those days are long gone!  I am taking my life back – one day at a time.  I am working on my eating habits, exercise habits, and (most importantly) my mental habits.  That awful, nasty little voice in my head is still there but the volume is turned *way* down, and I rarely (if ever) listen to it anymore.  I know I have this.  I know I will do this.  I know I will enjoy the rest of my (longer, healthier) life with my two beautiful little chicklets – being active and adventurous.  Go (healthier) me!  😉

Eventful Day

Despite its cuteness, this little cloud pretty much sums up my day yesterday.  It was one of those days where I wished I would have just slept through the whole thing…I am sure you know the kind of day I am talking about.

Actually, I guess that is me being a little melodramatic, although it was not a great day.  Here’s why:

1. I found out my trainer, Ebony, either quit or got fired.  Of course I am not going to get the entire story (nor is it any of my business), but it makes me sad.  I love Ebony, and I really love working out with her.  Boo!

2. As I was working out on the machines yesterday evening…sigh…I had a seizure.  Right in the middle of the gym.  Awful.  I absolutely *hate* doing that in public.  HATE.  I was on the ab-twister-machine-thingy (which is not the technical term for the machine, I know) and all the sudden I felt extremely shaky, weak, and a little sick to my stomach.  Que the tunnel vision.  So, I look at my mother, who then starts to panic and says, “Erica, oh God, you are so pale.  Are you alright?”  The next thing I know…waking up looking straight up at the lights with half a dozen people (or more…probably more) standing over me asking a million questions.  Can anyone say “embarrassing” over and over again?  Luckily, my mother prevented anyone from calling 911, which is a miracle to be honest.  Usually in a crowd like the one at the gym last night *someone* calls the squad.  Of course I left the gym as soon as I was able to stand steadily.  I walked with my head down (which doesn’t help much since it is bright, fire engine red with purple streak in the front, by the way) and quickly to the front door.

I ended up having to miss work (mandatory meeting) because I could not drive myself around town.  That stinks.  I am not in trouble with my boss or anything, but I will not be getting paid.  😦

So, how did my night turn out?  Well, here is the part where it gets a *little* better.  After an intermission at home, I went back to the gym to finish my workout.  Yes, I know, that sounds crazy.  My mother begged me not to go back.  The trainers all looked at me like I just grew fifteen more heads as I walked in.  Everyone could not believe that I was up and at it again.  Why should I not have gone back, though?  I recouped at home.  I ate.  I felt better.  I am determined.

I met my new trainer last night.  Her name is Denise, and I think I love her already.  She told me she was going to “take it easy on me” per explicit directions from Dorsey (GM personal trainer).  Although, after about 15 minutes I think she realized I wasn’t going to take it easy (with or without her), and she kicked it up a notch…or five.  By the end of the hour, I was sweating like I have never before sweated in my life.  I was doing P90X exercises with a 10-pound med ball, and I felt fantastic.  When I went to stand up, though, each of my legs felt as though they weighed 500 pounds.  I thought for sure I would be so sore today I could barely move.  Nope.  I feel slightly tender, but not too bad.  So, I will be back at the gym tonight.

Oh, and on a side note…after my “up” weigh in this past Sunday I have been weighing like a mad woman.  Here’s the story:

Sunday – 273.8
Monday – 273.4
Tuesday – 272.4
Wednesday – 271.8
Thursday – 271.0

I still have the rest of today, tomorrow, and Saturday before my “offical” weekly weigh in.  I think I’ll be fine this week.  🙂

Weigh Day (week fifteen)

So, here we are…another weekly weigh in.  Unfortunately, I may be seeing the beginning of an icky pattern.  A pattern where one week I am up, and the second week I am down.  How frustrating that is going to be (if it continues)…

My weigh in this week was 273.8, which is only 0.4 pounds up from last week.  The fact that it is *any* amount *up* from last week is what gets me, though.

Here is my thought process…
I only worked out three times at the gym this week instead of my usual four.  Ebony had to cancel Thursday night because she was horribly ill.  (Hope she’s feeling better, by the way.)  Wednesday night I met with Dorsey, though, and he K-I-C-K-E-D my butt in under 20 minutes – really.  He was showing me some postural corrective exercises (to fix that strange knee I mentioned earlier), so I thought it would be light and simple – NOPE!  I should have known better, honestly, working out with Dorsey is *never* “light and simple.”  I thanked him for it, though.  After finishing with Dorsey, I did my usual three sets of arms/abs on the machines followed by 35 minutes on the elliptical (2.5 miles).

My muscles were sore through Friday evening when I went to work out the legs and back some more (go figure).  My workout Friday was intense.  I added a few things Dorsey showed me Wednesday to my leg/back routine.  Honestly, it is Sunday, and my legs are still sore.  (Not horribly, but sore nonetheless)

So, I am wondering if working out only three days caused the gain…or if I just added some muscle mass this week, which outweighed my loss.  Either way – I can “explain it away” and it still bothers me tremendously.  Of course this means that I will likely be on the scale tomorrow morning wondering if that “extra” 0.4 pounds is going to go away.  We have a busy day today, so I will be up moving around quite a bit.  Here’s to hoping I weigh in lighter tomorrow.

Seafood and Mushroom Pasta

This is another recipe from my Facebook friend, Amy…and another I want to try.  Although I am not a big fan of clams, so I would probably substitute chicken instead.  I think it would still be equally delicious with chicken anyway.




1 tablespoon olive oil
1 tin (10 ounces) baby clams, with juice
1 pound shrimp, peeled and deveined
2 cups sliced mushrooms
2 large tomatoes, peeled and coarsely chopped
2 cloves garlic, minced
1 tablespoon fresh dill
ground black pepper
8 ounces whole wheat linguine
1/3 cup grated Parmesan cheese

If you blanch your tomatoes, their skins will slip off easily. Begin by coring the tomatoes with a paring knife, removing the stems and white middles. Then cut an X in the bottom of each tomato, cutting only the skin. Bring a pot of water to a boil and add the tomatoes to the water. Boil for about 30 seconds. Remove the tomatoes from the pot and immediately plunge them into ice water to stop the cooking process. when the tomatoes are cool enough to handle, use the edge of the knife to slip off the skin.

1. Warm the oil in a large saucepan over medium-high heat. When it’s hot, add the clams, shrimp, and mushrooms. Cook, stirring occasionally, for about 5 minutes, or until the shrimp are pink and the mushrooms are soft. Add the tomatoes, garlic, and dill. Reduce the heat to low and simmer for about 10 minutes, or until the juice from the tomatoes evaporates a bit. Season to taste with the salt and pepper. 2. Meanwhile, in a large pot, cook the linguine according to package directions. Drain the pasta and place it in a large bowl. Add the shellfish mixture and toss gently to combine. Sprinkle with the cheese and additional dill, if using, and serve.

Black Bean Salad

I came across this recipe today looking over a friend’s Facebook page…and it looks *amazing* to me!  I want to try this out sometime in the upcoming week.  I *love* fresh cilantro (so much, in fact, I grow it in my garden).


1/4 c smoked tomato vinaigrette (such as Drew’s)
1 can (15 oz) no-salt-added black beans, rinsed and drained
1 tsp ground cumin
2 c fresh corn kernels (about 2 large ears)
2 oz smoked mozzarella, diced
1 pint cherry tomatoes, quartered
3/4 c coarsely chopped avocado
1/2 c finely chopped red onion
1/4 c chopped fresh cilantro

1. In a large bowl, combine vinaigrette, beans, cumin, and salt and pepper to taste; set aside.
2. Heat a nonstick skillet over medium-high heat. Add corn and pan-roast, stirring occasionally, until lightly browned, about 4 minutes. Remove from heat and let cool. Stir corn and remaining ingredients into black bean mixture and toss together.
3. Chill until ready to serve. Divide evenly into four salad bowls.

Serves 4

TIP: If you use frozen corn kernels, make sure they’re thawed and dry so they don’t stick to the pan.


Weigh Day (week fourteen)

I must admit I was more excited to weigh today than I have been in a long time.  I know I have worked *hard* this week, and it certainly paid off…

This morning I weighed in at 273.4!  That is 4.4 pounds down from my “official” weigh in last Sunday, which makes me beyond happy.  Of course, that means I have passed another goal marker (275), and that means reward time!

My total weight loss is now 38.6 pounds in 14 weeks (which is an average of about 2.75 pounds a week).  I cannot even describe how excited I am about that, honestly.  So, now I have my eye set on my next goal weight, 262.  This is an important milestone for a couple reasons.  First, that will be exactly 50 pounds lost, which will be incredible.  Second, that is exactly how much I weighed before I had my first daughter.

Minor Malfunction

So, today is Thursday, which means I was at the gym with Ebony (yeah!).  I have been talking with her lately about stepping things up (because, apparently, I am anxious to have my butt kicked at the gym), so she did just that today.  I have not sweated so much in the two plus months I have been going to the gym – seriously.  The workout was awesome, though, and I am happy to have worked out so hard.  I bet some muscles are going to be sore in the morning.

While I had her, though, I decided to ask about the leg curl machine I have been using over the past two months.  Whenever I get to about a 45-degree angle, my left leg pivots out at the knee causing my calf and foot to contort while I finish the press.  I am sure I should have asked about it two months ago, but (for some strange and unknown reason) I just never have.  When I demonstrated for Ebony what my leg did, she looked at me like I just grew another head.  She had never seen anyone’s leg do that before…go figure.  So, she asked me what would happen if I consciously tried to turn my foot inward while pressing to counteract that “flip out thingy” (as she so astutely put it).  When I tried that, I could not move my leg past the 45-degree angle – I mean absolutely could not.  Puzzled, she went to her boss.

Know what?  I have a joint problem – my knee.  Apparently it is some sort of “postural defect in the joint” (says Dorsey – GM personal trainer for my gym).  So, they advised (strongly) against me using that machine anymore (boo!), and Dorsey said he will meet with me next week to show me some corrective exercises to help with the joint malfunction.

Now that I am sitting here at home thinking about it, I wonder if it has anything to do with my back.  I have a herniated disc in my lumbosacral spine, which deviates to the left.  When my disc acts up, which is about every stinking day, my left leg and butt check are the first places I feel it.  I wish I would have thought to ask that when I was still at the gym.  Oh well, I will be back there tomorrow and, hopefully, I will ask then.

Tuna Artichoke Melts


1 can (6 oz) light water-packed tuna, drained and flaked
1/3 c. coarsely chopped water-packed artichoke hearts
2 Tbsp fat-free mayo
1/2 c. shredded reduced-fat Mexican cheese blend, divided
1/4 tsp salt-free lemon-pepper seasoning
1/8 tsp dried oregano
2 English muffins, split and toasted

1. In a small bowl, combine tuna, artichokes, mayo, 1/4 c. cheese, lemon-pepper and oregano.  Spread over English muffin halves.

2. Place on a baking sheet.  Broil 4-6 inches from heat for 3 to 5 minutes or until heated through.  Sprinkle with remaining cheese; broil 1 to 2 minutes longer or until cheese is melted.

****I would decrease the lemon-pepper seasoning if I made this again.  It was a little too much for my taste.  Other than that, this was fantastic.  Also I used 100% whole grain bagels instead of English muffins and it was just as yummy.

Fruit-Filled Puff Pancake


1 Tbsp butter
1/3 c. all-purpose flour
3 Tbsp sugar, divided
1/4 tsp salt
3 eggs, slightly beaten
1/2 c. milk
1-1/2 c. fresh or frozen blueberries
1 medium ripe banana, sliced
1/4 tsp cinnamon

1. Place butter in a 9-in pie or cake pan.  Bake at 400 F for 4-5 minutes or until melted.  Meanwhile, in a medium bowl, combine the flour, 1 Tbsp sugar and salt.  Add eggs and milk; whisk until smooth.

2. Pour into hot pan.  Bake at 400 F for 10-12 minutes or until edges are puffed and golden brown.  Meanwhile, combine blueberries and banana.

3. In a small bowl, combine cinnamon and remaining sugar.  Spoon the fruit mixture onto pancake; sprinkle with the cinnamon-sugar.  Cut into wedges.

***You can use any fruit you’d like (we used blueberries, strawberries, and bananas).  Also I did not use even half of the cinnamon-sugar mixture.  I could not imagine piling on *that* much sugar…but you can if you want.

I wanted to share some “extra” photos I have.

This is *the* biggest strawberry I have ever seen in my life. My older daughter insisted we buy the batch this came in just so we could be the ones to eat it.

I just *had* to put it next to something so you could understand just *how* big this thing was!

Just to give you an idea - this is a standard size Eggo waffle covered by our giant strawberry.

Have you ever seen such a giant strawberry?  How in the world do they get to be *that* big?  Crazy.

This is what I had for lunch the other day. I will share the recipe with you all in the next couple days. It was yummy, but I would tweak the recipe slightly if I make it again.

I have been trying new recipes from my “diet” cookbooks…and I’ve been happy with the results so far.

I made this for my girlies and I yesterday morning for a special breakfast. I have never had a puffed pancake, but it was quite good (and quite filling). I will share this recipe shortly also.

I also wanted to mention that I hopped my hiney on the scale this morning (because the gain was driving me crazy)…276.2 (which is 1.6 pounds down from yesterday’s weigh in and .4 down from last week).  I have no idea what in the world happened yesterday morning, but at least I am underneath last week’s weigh in now.  That makes me happy – even if it is less than 1/2 a pound less.  Less is less.  🙂
